Wooden cutting boards, marble slab, and slate boards work great. You can also use a large baking sheet lined with wax or parchment paper.
Choose 4 to 5 different types of cheese and plan on serving about 3 to 4 ounces per person. Be sure to remove the cheese from the refrigerator an hour before serving for the flavors and aroma to really come through.
Aged: Cheddar, Gouda, Comte
Soft: Brie, Camembert, Chevre
Firm: Parmigiano Reggiano, Manchego
Blue: Gorgonzola, Stilton
Crackers and Breads:

Sliced baguette or artisan bread (such as walnut raisin)
Bagel or pita chips
I usually serve one sweet and one savory condiment.

Dried nuts (walnuts, pecans, pistachios, and marcona almonds)
