This Crunchy Asian Ramen Noodle Salad is quick and easy to make, perfect for serving as a side salad or with grilled chicken!

It’s holiday season and I hope you’ll agree with me that this is the most wonderful time of the year!

This has always been my favorite because of all the festive decorations, people in jolly mood, and the fact that we’re coming up to the year end with lots of reasons to celebrate.

Between the holiday shopping, travel arrangements, and party planning, it’s also the most busiest time of the year. With all the hustle and bustle, we still need to make time for the family and put together everyday meals. This is where this Crunchy Asian Ramen Noodle Salad comes into place!

With all the indulgent holiday dishes we’ve having lately like potato gratin, pecan pies and creamy or cheesy casseroles, I wanted to make something loaded with vegetables, have great crunchy textures, and are quick and easy to prepare.

This salad is perfect because it’s loaded with all the good stuff cole slaw mix, edamame, and peppers, almond noodles, coated with a ginger sesame dressing, and garnished with ramen noodles for extra crunch.

I made this salad last week and the best part was pairing it with Pagoda frozen appetizers (my favorite is Chicken Egg Rolls) and Gold Peak® Iced Tea. A tasty meal was literally ready in 15 minutes thanks to the convenience of these products!

Crunchy Asian Ramen Noodle Salad

Servings 4 -6

Ingredients

  • 1/3 cup cider vinegar
  • 1/3 cup vegetable oil
  • 2 tbsps honey
  • 1 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1 tsp grated ginger
  • Salt and pepper to taste
  • 8 cups coleslaw mix
  • 1 cup frozen edamame cooked
  • 1 large bell pepper shredded
  • 1/2 cup roasted almonds chopped
  • 1 package ramen noodles crushed (discard seasoning packet)

Instructions

  • In a large bowl, whisk together vinegar, oil, honey, soy sauce, sesame oil, and grated ginger.
  • Season with salt and pepper to taste.
  • Add in coleslaw mix and peppers, and mix well.
  • Garnish with almonds and ramen noodles. Serve immediately.
