These Blueberry Muffin Energy Bites are the perfect grab and go snack. They’re easy to make, absolutely delicious, and provide a burst of energy when you need it!

Happy Monday – hope you’ve had a wonderful weekend! After working out in an indoor gym for months, I decided to go for my first outdoor run of the season and the change of scenery was just what I needed. I almost forgot how I enjoy running in the outdoors much more than on the treadmill. Between the steep hills and uneven terrain, it was challenging at first but felt really good after I found my rhythm.

Guess what was patiently waiting for me when I was done? A batch of these Blueberry Muffin Energy Bites I made over the weekend. I was so glad to have some these no-bake energy bites on hand. Not only do they make a delicious and nutritious snack that is packed with healthy fat, protein and whole grains, they provide a boost of energy whenever you need it, helping you power through the day.

In this recipe, I used almond butter to bind everything together. You can use cashew butter or sunflower seed butter as well. Different nut butters have different texture (some are more runny than others), if the mixture turns out too wet, you can try adding more oats. If the mixture is too dry, add more almond butter until it becomes scoopable.

These energy bites are perfect snack for refueling after physical activities. Pack them into small baggies and tuck them into your gym bag or hiking pack for your next spring outing.

Ingredients

  • l cup old fashioned oats
  • 2 tbsps ground flaxseed
  • 1/2 cup dried blueberries
  • 1/4 cup unsweetened coconut flakes toasted
  • 2/3 cup almond butter
  • 2 tbsps honey or maple syrup or more to taste
  • 1/4 tsp cinnamon

Instructions

  • Add all ingredients to a large mixing bowl and stir to combine. Scoop out tablespoon size portions and roll into balls.
  • Place on baking sheet lined with parchment paper and chill for at least 30 minutes.
