Whether you’re making these jerk chicken bowls for a weeknight dinner, preparing them for meal prep, or simply craving a taste of the islands, this recipe is a delicious way to bring tropical flavor to your table.

What Is Jerk Chicken?

Jerk chicken is a Jamaican cooking tradition centered around intensely seasoned meat and a distinctive combination of spicy peppers, aromatic herbs, and warm spices. Jerk cooking has a long history in Jamaica, where seasoned meats were traditionally cooked slowly over wood from the pimento tree.

The exact history of the word “jerk” isn’t completely settled. One commonly cited explanation connects it to the Spanish word charqui, referring to dried meat. Another explanation relates the name to the traditional practice of piercing or “jerking” meat so seasoning could penetrate it.

Over time, jerk cooking became one of Jamaica’s best-known culinary traditions and is now enjoyed in many different forms. Chicken is particularly popular, but the same style of seasoning can be used with pork, seafood, and other meats.

Traditional jerk cooking often involves grilling or smoking, but you can make excellent Jamaican jerk chicken indoors. This recipe uses a skillet, making it practical enough for cooking at home any time of year.

The Key Ingredients in Jerk Cooking

While jerk recipes can vary considerably, several ingredients are closely associated with traditional jerk flavor.

Scotch bonnet peppers – provide the characteristic Caribbean heat. These peppers are quite spicy, so you can adjust the amount according to your preference. If you’re cooking for kids or anyone sensitive to spicy food, reducing or leaving them out is an easy way to make the recipe milder.

Allspice berries – another important ingredient in traditional jerk seasoning. They come from the pimento tree and have a warm flavor with notes reminiscent of several familiar spices. If you have whole berries, grinding them fresh can provide particularly aromatic results.

Thyme – adds an earthy herbal note that balances the spicy peppers and warm spices. Fresh thyme works beautifully, although dried thyme is convenient and easy to find.

This recipe uses prepared jerk seasoning and green seasoning to make the process much simpler while still delivering the bold flavor you expect from jerk chicken.

Can You Use Storebought Jerk Seasoning For This Recipe?

Yes. Store-bought jerk seasoning is absolutely fine to use for this recipe, and it actually makes the recipe much easier for home cooks. You can use either a dry jerk seasoning blend or a prepared jerk marinade, depending on what you have available.

Ingredients You’ll Need to Make This Recipe

For the Jerk Chicken

Chicken thighs — Boneless, skinless chicken thighs stay juicy and tender during cooking. Chicken breasts can be substituted if you prefer white meat.

Jerk seasoning — Provides the main blend of warm spices, herbs, savory flavor, and smoky heat.

Green seasoning — Adds fresh herbs and aromatic ingredients to the chicken.

Olive oil — Helps coat the chicken and encourages browning in the skillet.

For the Pineapple Salsa

Fresh pineapple chunks — Create the sweet, juicy base of the salsa and provide a refreshing contrast to the seasoned chicken.

Red onion — Adds crunch and a mild sharpness that balances the sweetness of the pineapple.

Red bell pepper — Adds sweetness, crunch, and vibrant color.

Poblano pepper — Adds mild pepper flavor without overpowering the salsa.

Scotch bonnet pepper — Adds the signature Caribbean heat. Reduce the amount or leave it out for a milder salsa.

Lime juice — Brightens the salsa and balances the sweetness of the pineapple.

Fresh cilantro — Adds a fresh herbal note that complements the jerk seasoning.

Salt — Enhances the flavors of the fruit, vegetables, and herbs.

For the Coconut Rice

Jasmine rice — Creates a fragrant, fluffy base for the bowls. Regular white rice or brown rice can also be used.

Coconut milk — Gives the rice its creamy consistency and subtle coconut flavor.

Chicken broth — Adds savory depth to the rice.

Salt — Seasons the rice and brings out the coconut flavor.

What Is Green Seasoning?

Green seasoning is a fresh Caribbean herb and seasoning blend made with ingredients such as green onions, garlic, thyme, peppers, and other fresh herbs. It adds a fresh, savory flavor to chicken and is commonly used as a marinade in Caribbean cooking. You can find prepared green seasoning in some grocery stores or make your own at home. If you don’t have green seasoning, you can substitute a mixture of fresh herbs, garlic, and green onions.

How to Make Jerk Chicken Pineapple Bowls

Season the Chicken

Place the chicken thighs in a large bowl. Add the jerk seasoning, green seasoning, and olive oil.

Toss the chicken until every piece is evenly coated. Cover and refrigerate for at least 30 minutes. If you have time, marinating the chicken overnight will give the seasonings even more opportunity to flavor the meat.

Cook the Jerk Chicken

Heat a large skillet over medium heat. Add the seasoned chicken and cook for 5–7 minutes per side, depending on the thickness of the chicken. Continue cooking until the outside is browned and the chicken reaches an internal temperature of 165°F.

Instead of cooking it on the stovetop, you can also grill the chicken for an extra layer of smoky flavors.

Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing.

Allowing the chicken to rest helps keep it juicy when you cut into it.

Make the Pineapple Salsa

While the chicken is cooking, prepare the salsa.

Add the fresh pineapple chunks, red onion, red bell pepper, poblano pepper, and finely minced scotch bonnet pepper to a small bowl.

Add the lime juice, fresh cilantro, and salt. Stir gently until everything is combined.

Refrigerate the salsa until you’re ready to assemble the bowls.

Make the Coconut Rice

Rinse the jasmine rice under cold water until the water runs mostly clear.

Add the rice, coconut milk, chicken broth, and salt to a medium saucepan.

Bring the mixture to a boil over medium-high heat. Reduce the heat to low, cover, and cook for 15 minutes.

Remove the saucepan from the heat and let the rice stand, covered, for 5 minutes. Fluff gently with a fork.

How to Assemble the Jerk Chicken Pineapple Bowl

Divide the coconut rice between bowls.

Slice the rested jerk chicken into strips and arrange it over the rice.

Spoon the pineapple salsa over the chicken and rice and serve immediately.

There’s no need for a separate sauce. The combination of the juicy jerk chicken, creamy coconut rice, and sweet-and-tangy pineapple salsa provides plenty of flavor on its own.

Tips for Making the Best Jerk Chicken

  • Give the chicken time to marinate. Even 30 minutes makes a difference, but you can marinate the chicken overnight for deeper flavor.
  • Don’t overcrowd your skillet. If your skillet isn’t large enough to comfortably hold all of the chicken, cook it in batches. Crowding the pan can cause the chicken to steam rather than brown.
  • Watch the heat. Cooking over medium heat allows the chicken to develop a flavorful exterior without allowing the seasoning to burn.
  • Use a thermometer. The safest way to know when the chicken is finished is to check that the thickest portion reaches 165°F.
  • Let the chicken rest. Give the chicken about 5 minutes to rest before slicing so it stays juicy.
  • Adjust the spice level. Scotch bonnet peppers can be extremely hot. Start with a small amount if you’re unsure how much heat you want.

How Do I Make Jerk Chicken on the Stovetop?

To make jerk chicken on the stovetop, season the chicken generously with jerk seasoning and let it marinate for at least 30 minutes. Heat a large skillet over medium heat with a small amount of olive oil, then cook the chicken until browned on the outside and cooked through. The chicken should reach an internal temperature of 165°F before serving. Let it rest for about 5 minutes before slicing.

This Jerk Chicken Pineapple Bowl is a Bahama Breeze copycat recipe made with juicy Jamaican jerk chicken, creamy coconut rice, and fresh pineapple salsa for an easy tropical-inspired dinner.

Can I Use Chicken Breasts Instead of Chicken Thighs?

Yes. Chicken breasts are an easy substitute for chicken thighs if you prefer leaner meat.

Because chicken breasts contain less fat, they can dry out more quickly. Try to use pieces of similar thickness and avoid cooking them beyond 165°F.

Chicken thighs are my preferred choice for this recipe because they remain particularly juicy and tender, but either option works.

Can I Grill the Jerk Chicken?

Absolutely. Grilling is a classic way to prepare jerk chicken and is especially enjoyable during the warmer months.

Preheat your grill and cook the chicken over medium heat until browned and cooked through. Keep an eye on it because jerk seasoning can contain ingredients that brown quickly.

If grilling isn’t an option, cooking the chicken in a large skillet gives you an easy year-round alternative.

How Long Should I Marinate Jerk Chicken?

For the best flavor, marinate jerk chicken for at least 30 minutes. If you have more time, you can marinate it for several hours or overnight in the refrigerator. Longer marinating gives the seasonings more time to flavor the chicken, but even a short 30-minute marinade works well when you’re making a quick weeknight meal.

This Jerk Chicken Pineapple Bowl is a Bahama Breeze copycat recipe made with juicy Jamaican jerk chicken, creamy coconut rice, and fresh pineapple salsa for an easy tropical-inspired dinner.

Can I Use a Different Type of Rice?

Yes. Jasmine rice is my favorite for this bowl because its fragrant flavor pairs beautifully with the jerk chicken.

You can substitute white rice if you want something simple, or use brown rice for a heartier whole-grain option.

Cauliflower rice is another option if you’re looking for a lighter alternative.

The coconut milk can be kept in the recipe when using jasmine rice or another white rice. If using brown rice or cauliflower rice, follow the cooking instructions appropriate for that particular rice.

How Spicy Is This Recipe?

The heat level depends largely on your jerk seasoning and how much scotch bonnet pepper you use.

For a mild bowl, omit the scotch bonnet pepper from the salsa and choose a mild jerk seasoning.

For medium heat, use a small amount of finely minced scotch bonnet pepper.

If you love spicy food, you can increase the amount of pepper to taste.

What Can I Add to These Jerk Chicken Bowls?

One of the best things about making bowls at home is how easy they are to customize.

Add black beans for additional protein and fiber, or try a spoonful of black bean salsa for even more texture.

You can also add extra bell peppers, avocado, leafy greens, or additional fresh pineapple chunks.

For a different presentation, serve the jerk chicken over leafy greens instead of rice for a Caribbean-inspired salad.

Can I Make This Recipe Ahead of Time?

Yes. This recipe is excellent for meal prep because the individual components can be prepared ahead of time.

Cook the chicken and coconut rice, then store them separately in airtight containers. The pineapple salsa can also be prepared ahead, although it will have the best texture when enjoyed fresh.

When you’re ready to eat, reheat the chicken and rice and top with the chilled pineapple salsa.

Keeping the salsa separate prevents the fresh pineapple and vegetables from becoming soft and watery.

How to Store This Recipe

Store leftover jerk chicken and coconut rice in separate airtight containers in the refrigerator for up to 4 days.

Store the pineapple salsa separately and use it within 2 days for the best texture and flavor.

To reheat, warm the chicken and rice until heated through, then add the pineapple salsa and green onions just before serving.

The cooked chicken and coconut rice can also be frozen for up to 3 months. Thaw overnight in the refrigerator and reheat thoroughly before serving.

Do I Have to Use Scotch Bonnet Peppers?

No. They provide traditional heat and flavor, but you can reduce the amount or leave them out completely if you prefer a mild recipe.

Can I Make the Pineapple Salsa the Day Before?

Yes. You can prepare it up to a day ahead and keep it refrigerated in an airtight container. For the freshest texture, however, it’s best enjoyed the same day.

Can I Add BBQ Sauce?

You can if you enjoy the combination, but BBQ sauce isn’t necessary. The jerk chicken and pineapple salsa already provide a sweet, savory, spicy, and tangy combination.

Is Jerk Chicken Healthy?

Jerk chicken can be part of a balanced meal, especially when served with nutritious sides such as vegetables, leafy greens, or a moderate portion of rice. Chicken provides protein, while the herbs, peppers, and spices used in jerk seasoning add plenty of flavor without requiring heavy sauces. For a lighter meal, you can use skinless chicken, control the amount of added oil, and serve your jerk chicken with vegetables or cauliflower rice.

Can I Make Jamaican Jerk Chicken in a Slow Cooker or Crock Pot?

Yes, Jamaican jerk chicken can be prepared in a slow cooker or Crock Pot. Season the chicken thoroughly with jerk seasoning and your preferred aromatics, then cook until the chicken is tender and reaches an internal temperature of 165°F. Keep in mind that slow cooking won’t produce the same browned exterior as grilling or cooking the chicken in a skillet, so you can briefly sear the chicken before slow cooking if you want additional color and flavor.

Can I Make Jamaican Jerk Chicken in an Instant Pot?

Yes. An Instant Pot can be used to make Jamaican jerk chicken when you want a faster cooking method. Season the chicken well, add the required cooking liquid, and cook according to your Instant Pot’s instructions for the type and amount of chicken you’re using. For extra flavor, use the sauté function to brown the chicken before pressure cooking.

What Are the Best Side Dishes for Jamaican Jerk Chicken?

Jamaican jerk chicken pairs well with sides that balance its spicy, savory flavor. Coconut rice, rice and peas, fried plantains, coleslaw, roasted vegetables, and fresh salads are all great choices. For this jerk chicken pineapple bowl, coconut rice and fresh pineapple salsa provide a particularly good contrast to the warm spices and heat of the chicken.

Is This an Authentic Jamaican Jerk Recipe?

This is a homemade recipe inspired by the flavors and techniques associated with Jamaican jerk cooking. It is designed as a Bahama Breeze copycat-style meal rather than a claim to be an official restaurant recipe.

This jerk chicken pineapple bowl is a simple way to bring Caribbean-inspired cooking into your kitchen. The seasoned chicken provides savory depth and smoky heat, while the coconut rice adds richness and the pineapple salsa brings a fresh, sweet contrast.
