Have you been following the NCAA March Madness? I haven’t been paying too much attention to the tournament this year to know which teams are promising or not, but I’m hoping to make it back in time for the championship game. I’ll be leaving tonight for a two-week long vacation in Hong Kong (my sister’s wedding part two) and Beijing, but I certainly won’t leave you guys hanging! Even if your team doesn’t win the championship, you can be sure that your menu lineup is a winner. In addition to the usual suspects – guacamole, dips, and chips – this snack combines two game day crowd-pleasers: buffalo chicken and pizza. Boneless chicken breast is tossed in homemade buffalo sauce, piled on a precooked flatbread, and topped off with cheddar cheese and creamy blue cheese dressing. Pop them in the oven just before game time and they’ll be ready to serve just in time for tip-off. It’s so quick and easy to make, you’ll want to go for a second round during halftime.
