Start your morning off right with this refreshing, nutritious Strawberry and Beet Smoothie.
Did your favorite team make it to the Super Bowl this year, or better yet, bring home the 2015 trophy?! Hot wings, nachos, and beers are just as much of a Super Bowl Sunday tradition as the halftime performance (one of the best I have ever seen), commercials (McDonald’s #payinwithlovin…say what?!), and the game itself (the ending was simply amazing AND hard to believe), I thought I should start the week off on the right foot after a day of indulgences. Not going to lie…I had my fair share of wings and chips last night!
Continuing the theme of my post-holiday shape up, I drank my fruits and veggies for breakfast in the form of a Strawberry and Beet Smoothie! Green Monsters are the all the rage right now. Can’t get over the Kermit-colored drinks? I have the perfect remedy for you — how about a pretty, vibrant PINK Monster?
Cooked beets, frozen strawberries, and orange juice are blended up into a thick, refreshing, and nutritious drink. Sweet, tart, and earthy — beets and strawberries actually make an unexpectedly great combo. I love beets but just can’t eat them raw – it makes my throat itch – so I used cooked ones for my smoothies. Does anyone else have that reaction to raw beets?
I also added a scoop of protein-packed Greek yogurt for staying power and a spoonful of white chia seeds from Health Warrior (I’ll share my review of HW Chia Bars in an upcoming post). Why chia seeds? Well, in addition to being loaded with minerals and antioxidants, ounce-for-ounce chia seeds have more protein than tofu, more fiber than oatmeal, and more omega-3’s than salmon! Because the seeds have no noticeable flavor (the texture is just like kiwi seeds), it’s really easy to incorporate into your diet. You can sprinkle them on top of yogurt, oatmeal, salads, and baked goods.
In other news, I was talking to my coworker about running speed and he said he averages 7mph (he is a marathon-runner and Iron Man after all). The maximum speed I can go on the treadmill is 6.5mph before feeling like my legs are going to fly off the treadmill! Well, everyone has to start somewhere, so to tack onto my New Year’s resolutions, I am committed to running faster this year. We’ll see how that one goes!
- ½ cup raw or cooked beets, roughly chopped
- 1 cup frozen strawberries
- ¼ cup Greek yogurt
- 1 cup orange juice
- 1 tsp chia seeds
- Add all ingredients to a blender and blend till smooth. Add more orange juice if necessary to achieve desired consistency.
