You can probably tell by now how much I enjoy breakfast foods. Eating a fresh, healthy breakfast helps me fuel up for the day so that I’m not running on empty. This Carrot Cake Oatmeal is a great way to start the morning off right. I mean, who doesn’t like cake for breakfast?!
This oatmeal incorporates ingredients that are reminiscent of carrot cake like shredded carrots, raisins, and cinnamon, topped with a dollop of creamy “frosting” made with thick Greek yogurt and maple syrup. This is the type of dessert for breakfast dish you’ll feel good eating.
- 1 cup old fashioned oats
- 2 cups milk or water
- ½ cup grated carrots
- 2 tbsps raisins
- 2 tbsps maple syrup
- ½ tsp cinnamon
- ⅛ tsp nutmeg
- Pinch of salt
- ½ cup Greek yogurt
- 1 tsp maple syrup
- ¼ cup chopped walnuts, pecans, or pumpkin seeds
- In a medium saucepan over medium high heat, combine oats, milk, grated carrots, raisins, maple syrup, cinnamon, nutmeg, and a pinch of salt.
- Cook until the mixture has thickened up, about 8 minutes, stirring frequently.
- Divide oatmeal into two bowls and top with Greek yogurt mixed with maple syrup and chopped nuts. Serve warm.
