Fresh, healthy and delicious, this Summer Corn Salad is a tasty addition to any pizza night.
I don’t know about you, but summer is always the busiest time of the year for me. Let’s face it, sometimes life just gets too busy for us to spend time in the kitchen preparing an entire meal. That’s when an impromptu pizza night comes into the picture — come together over the timeless pizza!
The perfect pizza starts with the perfect crust – a crust that’s not too thick and not too thin, but one with a consistently satisfying crunch. But of course it doesn’t end there. When I’m having pizza, I like to round out the meal with a healthy homemade salad. One of my recent favorites is this yummy Summer Corn Salad tossed with fresh, zesty vinaigrette.
They say you should eat the rainbow to be healthy, I think this comes pretty close. You can use grilled or roasted fresh corn kernels, and if you’re pressed for time, frozen or canned corn kernels work as well. Now it’s a cinch to put the rest of the salad together.
Just look at all those fresh and delicious vegetables. It’s the perfect complement to any fresh-out-of-oven Red Baron pizza.
- 3 tbsps olive oil
- 2 tbsps fresh lime juice
- Salt and pepper, to taste
- 2 cups corn kernels or 3 ears corn, boiled or grilled
- 3 plum tomatoes, seeded and diced
- 2 scallions, finely chopped
- 1 small red onion, diced
- Chopped parsley, for garnish
- In a large bowl, whisk together olive oil and fresh lime juice. Season with salt and pepper to taste.
- Add remaining ingredients to the bowl and toss until well combined. Let sit for at least 30 minutes. Serve cold or at room temperature.
