Time for frozen treats! I’ve been waiting for the perfect opportunity to talk about popsicles, and there isn’t a better one than today, when it is sunny, muggy, and just screams summer. This isn’t another popsicle that is overly sweetened and tinted with red food coloring. Since it is loaded with yogurt and fresh fruits, it can actually pass as a healthy snack that you can feel good about eating.
And this post is not so much a recipe, but more of a method. Mix it up and voila…done!
That was a bit anti-climactic, wasn’t it? Sorry about that. But my point is, they’re easier made than said (you do need to wait few hours for them to set, so that might be the hardest part). You can use whatever berries you like and are in season, and feel free to substitute with low-fat or non-fat yogurt for a low-calorie treat.
Triple Berries Yogurt Popsicles
(Makes 4 popsicles)
½ cup raspberries
½ cup blackberries
½ cup blueberries
1 ½ cups vanilla yogurt
4 popsicle molds and popsicle sticks, or 6 Dixie cups
In a blender or food processor, process raspberries, blackberries, blueberries, and yogurt until smooth (or coarsely blended if you prefer pieces of fruits). Divide mixture evenly into four popsicle molds. Set popsicle sticks in the middle of the molds. Freeze for six hours or until solid.
*I don’t mind the berry seeds, but if you do, you can remove them by passing the yogurt mixture through a sieve.
